Part Workshop, Part Local Three-Course Feast, Seafood 101, 102 and 103 is a series of cooking classes beginning in May.
In collaboration with Laurence Hauben of Marketing Forays, this 3-part series will take the mystery out of preparing various types of local seafood. At the end of each lesson, a delicious meal will be shared. Come learn how to deal with a whole fish, a basket of live crab or a recalcitrant oyster. Get that golden crust and moist inside like they serve at high-end restaurants, decide what cooking techniques and sauces go with different types of fish, tell if a fish is fresh and more. Below is a rough sketch of what you can expect at each course. Please note that menus are subject to change based on seasonal availability.
Seafood 101
Techniques:
-Working with whole fish
-How to assess a fish and cook according to type and flavor
-Cooking fish without heat
Menu:
-Shrimp and Squid Escabeche on a Salad of Crisp Romaine
-Whole Red Snapper with Almonds, Cilantro, Lime and Parsley Butter
-Pippian, Sautéed Summer Squash w/ Corn Tortilla
-Caramel Flan
Seafood 102
Techniques:
-Incorporating seaweed
-Working with fish from lean to fatty; multiple prep methods
Menu:
-Ogo Seaweed & Cucumber Salad w/ Abalone
-Halibut Crudo & Pan-Roasted, Citrus Beurre-Blanc
-Black Cod Marinated and Broiled
-Steamed Rice
-Organic Strawberries & Cream
Seafood 103
Techniques:
-Fillet a whole fish
-Make a rocking seafood stock
-Shuck oysters
Menu:
-Oysters on the Half Shell
-Poached Lobster Medallions w/ Fennel and Carrot Slaw
-Cioppino (Fish Stew) w/ Garlic Bread
-Peach Galettes

Class will start promptly at 5:30 pm, dinner at 7:00 pm.

Classes will be hosted at the beautiful, newly renovated kitchen at Santa Barbara Middle School on Santa Barbara’s Riviera. Our gorgeous locally-sourced feast after class will take place in the courtyard overlooking the Santa Barbara coastline. Bring a warm layer in case the fog rolls in.
