In Salade II, the author’s recipes were inspired by, amongst other things: the unexpected gift of a salad bowl, goat cheese, Peach Bellinis at Harry’s Bar in Venice, Italy, an entrepreneurial meeting with women business owners, her neighbor’s tomatoes, an unusually long rainy season which yielded a plethora of sumptuous mushrooms, and of course, the exquisite produce found in her local farmers markets, whether in London, France or California, the places she calls home.

Surrounded by a family passionate about food, wine and the arts, Pascale Beale grew up in England and France where she learned classical French culinary techniques from her grandmother, and Provençal-Mediterranean cooking from her mother. With a deep-rooted love for cooking at an early age, and later encouraged and inspired by her friendships with Julia Child, Michel Richard and Alain Giraud, in 1999 she founded Pascale’s Kitchen, a Santa Barbara, California-based cooking school devoted to California-Mediterranean cuisine.
