I was never a whiz at word problems, but here’s one I’d love to take a shot at solving: What do you get when you multiply five chefs by five pigs by five winemakers? I think I’d answer hog heaven, but it turns out it’s Cochon 555, a national event that celebrates and raises funds for the heritage pig and that, alas, gets no closer than San Francisco on Sunday, June 14, at the Fairmont Hotel. Chefs from A16, 4505 Meats, Perbacco, Poggio Trattoria, and Boulevard will each serve up a 70-pound heritage pig from snout to trotter. It’s a competition, but the winner is everyone who attends and gets to try the best pork available cooked by talented chefs. Previous battles have featured everything from pork belly banh-mi to bourbon and bacon ice cream served in a bacon cone. That’s a taste treat you just can’t waffle about.
