A tasting flight of four Goat Bubbles sparkling wines will include Rosé, Crémant, Blanc de Blancs and Blanc de Noirs. The tasting room is located in the Lompoc Wine Ghetto at 1520 East Chestnut Court, Unit A.

Goat Bubbles is all hand made in the traditional méthode champenoise, with a secondary fermentation in the bottle. All steps of the production process are in-house at the Flying Goat Cellars winery located in Lompoc, California. Each sparkling wine is a vineyard designate: Blanc de Noirs is Pinot Noir from Clos Pepe Vineyard in the Sta. Rita Hills AVA, Rosé is Pinot Noir from Solomon Hills Vineyard in the Santa Maria Valley AVA, Crémant is Pinot Blanc from Sierra Madre Vineyard and Blanc de Blancs is Chardonnay from Sierra Madre Vineyard, located in the Santa Maria Valley AVA.

The first vintage of Goat Bubbles was the 2005 Rosé. The only vintage of Goat Bubbles submitted to Wine Spectator was the 2009, with accolades of 89 points for both the Blanc de Blancs and Blanc de Noirs. Goat Bubbles’ whimsical name, label and tagline “A Toast is Not Just for Breakfast!” complement the seriously delicious California sparkling wine.

Flying Goat has a wine club dedicated to its sparklers called Club Celebrate. Membership in the Club offers 10% discount on all Goat Bubbles purchases and two bottles of each new release, four times a year in February, April, October and December. The April release for Club Celebrate members is the 2011 Goat Bubbles Blanc de Blancs.

Winemaker Norm Yost will be at the Bubbles Bar Grand Opening to demonstrate the noble art of sabrage, the technique for opening a Champagne bottle with a sabre, and to discuss the sparkling wine process. Flying Goat Cellars Pinot Noirs and Pinot Gris will also be available for tasting in the regular flight.

Flying Goat Cellars is a boutique winery that produces less than 2,500 cases a year and includes three labels: Flying Goat, Goat Bubbles and YNOT. Flying Goat focuses on vineyard designated Pinot Noirs and Pinot Gris. Goat Bubbles offers four vineyard designated sparkling wines: Rosé, Blanc de Blancs, Blanc de Noirs, and Crémant, all made in the traditional méthode champenoise with the secondary fermentation in the bottle.
